How to Store Cookies & Biscuits in Indian Weather (So They Stay Crisp)

Our bakes leave the oven crisp. Whether they stay that way in a Mumbai monsoon or a Delhi summer comes down to how you store them at home. Here is the short version from our kitchen.

Why biscuits go soft

Flour and sugar are hygroscopic — they pull moisture straight out of humid air. A crisp biscuit sitting in an open bowl on a rainy afternoon can lose its snap in a few hours. Nothing has gone wrong with the bake; it has simply drunk the room.

The five rules

  1. Cool completely before sealing. Warm bakes create steam inside the jar, and steam is softness.
  2. Use glass or steel, not plastic wrap. An airtight jar with a rubber gasket beats any pouch clip.
  3. Keep cookies and biscuits apart. Soft cookies give off moisture that crisp biscuits happily absorb.
  4. Skip the fridge. Refrigeration makes baked goods stale faster and adds condensation every time you open the jar.
  5. Store away from the stove and sunlight. Heat turns butter rancid long before the biscuit goes bad.

How long things actually last

  • Cookies: best within 10–12 days of baking, sealed at room temperature.
  • Biscuits: 3–4 weeks in an airtight jar, because there is almost no moisture left to spoil.
  • Dry fruits: up to 3 months in an airtight jar away from sunlight.

Reviving a soft biscuit

It is not a lost cause. Spread the biscuits on a tray and warm them at 140°C for 5–6 minutes, then cool them completely on a wire rack before they go back in the jar. The heat drives the absorbed moisture out and the snap comes back.
